Charred Corn & Avocado Quinoa Salad Recipe

Yum! This salad reminds me of chaskas (or elote), which is a Mexican dish with corn, cream, lime, chile, and cheese. Not very healthy if you load it with cream and cheese, but one of my favorite foods growing up. This dish though is loaded with nutrients AND flavor. Perfect for summer.

Ingredients

Salad Ingredients

  • red quinoa (or other)
  • sweet corn
  • poblano peppers
  • fresh cilantro
  • cotija cheese (a popular hard, dry cheese from Mexico- you can sub goat cheese or feta)
  • avacados

Dressing Ingredients

  • olive oil
  • lime juice
  • fresh garlic
  • fresh cilantro
  • ground cumin
  • avacados
